Food Activities:

  • Culinary Competition - In this exciting hands-on teambuilding class, participants are called upon to work together to promote leadership and involvement. Participants will be given specific objectives at their cooking station to be accomplished in a limited time frame. Two recipes will be presented (in the form of a one minute verbal presentation) to judges for evaluation and scoring. Only by diligently managing time and people resources will participants be able to successfully accomplish the team goals. Prizes will be awarded to the winning team. This event will require approximately 90-120 minutes to complete.
  • Iron Chef - In this exciting hands-on team building class, participants are challenged to create Culinary masterpieces! Participants will be divided into teams and will be given identical ingredients. They will then compete by creating two dishes within parameters assigned by the chef. Winning teams will be chosen by our panel of judges based on creativity, taste, teamwork and organization. Prizes will be awarded to the winning team. This event will require approximately 60-90 minutes to complete.
  • Hands On Pizza MakingIn this fun hands-on class, great for groups with or without kids present, participants are tasked with creating pizza pies that they will eat at the conclusion of the event! All participants will be given identical ingredients, which include some favorite and some not-so-famous toppings. They will begin their task by shaping the dough, then topping it with their favorite ingredients and finally cooking the pizza to perfection. Once the pizzas are done participants will sit down and eat their proud creations. Adding a Caesar salad makes it a perfect meal! This event will require approximately 60-90 minutes to complete.

Wine Activities:

  • Behind The Scenes Winery Tour - This trip will take you way beyond the typical winery tasting room experience. Our Sommelier will personally lead your group through the entire visit. You’ll tour one of two local wineries from the vineyards to the cellars, learning the entire winemaking process from growing the grapes to blending the wines. A private barrel tasting in the aging cellars and a box lunch are included. Duration: 5-6 hours.
  • Crash Course in Wine - In this fun presentation, groups of participants are asked to come up with a “wine fact”. Our Sommelier will then dissect this information, informing participants of the details behind their factoids and separating fiction from truth. Next, each person will sample 4 wines from the selections of the day, and snack on gourmet cheeses, crackers, and bread. Participants will walk away with a broader understanding of what they thought they already knew as well as a memorable tasting experience. This event will require approximately 60 minutes to complete.
  • Regional Wine Tasting –   Explore the diversity of varietals and winemaking styles of various viticultural areas in this animated presentation. Participants will be guided on a progressive tasting of four wines selected from four of the major wine producing regions. A narrative account of regional differences in style, winemaking techniques, microclimates and historical perspective will be offered. A question-and-answer period will be included. The event will require approximately 60-90 minutes to complete.
  • 5 Easy Steps to Really Enjoying Wine - This entertaining presentation will appeal to novices and experts alike! Our Sommelier will help guests debunk the wine snob mystique and get to the heart and soul of enjoying wine. Audience participation makes this event unique every time. Our Sommelier will teach participants how to pick a wine from even the most extensive wine list, how to avoid intimidation when selecting wines, and will shed light on current trends in world winemaking styles. Two white wines will be sampled during this activity. This event will require approximately 60 minutes to complete.
  • Find the $100 Wine - Guests will learn about how we really perceive wine through a series of practical exercises and description led by our sommelier.

Food & Wine Activities:

  • Cooking Demonstrations -   Participants will get to explore the world of cooking with our Chef, who will lead them through a three course meal. Each course will be explained, demonstrated, and then served to the participants. Our Sommelier will pair a wine to each course of the meal. This event will require approximately 90-120 minutes to complete. Both activities below are designed for groups of 15-36 people. Groups of fewer than 15 guests will be priced on an individual basis.
    •     First Course: Grilled Hearts of Romaine with Balsamic Vinaigrette and Bleu Cheese Crumbles
    • Second Course: Chicken Wellington, Stuffed with Ricotta Cheese and Spinach, Served with a Sun-Dried Tomato Sauce
    • Third Course: Apple Fruit Crumble, Served with Vanilla Ice Cream

  •     First Course: Risotto Milanese (Classic Risotto with Clams, Mussels, Shrimp, and Saffron)
  • Second Course: Steak Au Poivre with Sliced Herbed Potatoes and Chef’s Seasonal Vegetable
  • Third Course: Bananas Foster
     
  • Hands On Cooking -   In this exciting hands-on class, participants are called upon to prepare a three course meal. First our Chef will demonstrate a course, then participants will execute each course on their own. Each course will be enjoyed after it is prepared. Our Sommelier will pair a wine with each course, and introduce it as the participants sit down to dine on each course of the meal. This event will require approximately 90-120 minutes to complete.

    Menu Options:

    A Meal In Provence

    • First Course: Warm Spinach Salad with Bacon and Sizzled Shallots
    • Second Course: served with fettucine and seasonal vegetable
    • Pan Seared Prawns a la Marseille (with olives, vine ripe tomatoes, and capers) OR Parmesan Crusted Chicken Paillarde
    • Third Course: Classic Crème Brulee

    Tour of Tuscany

    • First Course: Caesar Salad Served with Handmade Garlic DressingSecond Course: Shrimp Scampi, Sauteed with Tomatoes and Capers in a Garlic Wine Sauce
    • Third Course: Sicilian Cheesecake

  • International Passport - Take a tour of the wine world by visiting international stations within our facility. Each station will feature a unique wine from various national origins with paired finger foods to accentuate the flavors of the wines. Make sure to have your passport stamped at each stop so you can enter it into the prize drawing at the end of the event. This event will require approximately 60-90 minutes to complete.
    • For groups of up to 99 guests, there will be three stations: CA Coastal, France and Italy.
    • For groups of 100 or more, an additional station will be setup: Spain.

  • Wine & Cheese Pairing - In this fun class, you’ll taste and compare a variety of cheeses and wines and learn how they complement each other. You’ll sample cheese from different origins, different types of milk, and different production techniques. We will pair them with diverse wines, specially selected to enhance the attributes of the various cheeses. Learn the secrets of matching flavors to maximize your enjoyment. This class includes three distinctive wine/cheese pairings. This event will require approximately 60-90 minutes to complete.
  • Wine & Chocolate Pairing - In this fascinating presentation, you will learn about the origins of various chocolates and the production techniques used to produce the final, delicious edible product. We will then proceed to sample a variety of fine chocolates with wines and ports specially selected to enhance their flavors. Enjoy the pure decadence of these delightful pairings. The event will require approximately 60-90 minutes to complete.

  • Wine & Culinary Olympics -   Imagine an exciting, high energy game show based entirely on food and wine! Our Wine & Culinary Olympics event is guaranteed to have your group enthused and engaged. First, we divide everyone into teams for this three part extravaganza. Part One is based on the Jeopardy game show and features a giant game board. One by one, the individual teams send up contestants to choose questions of varying dollar amounts. Correct answers accumulate “dollars” for the team total. Part Two is practical, where team participants are asked to identify various wine and food items by taste, smell or appearance. Finally, in Part Three, the teams are challenged to develop lists on specific food and wine subjects as prompted by the game show host. Points are awarded for the number of correct entries and subtracted for incorrect ones. In conclusion, the judges tally the team totals and gather everyone to announce the winning team. Prizes will be awarded to the winning team members. The event will require approximately 90-120 minutes to complete.

Other:

  • Grape StompThe ultimate in Team Building and plain old fun! We will host your very own grape stomping, complete with a team stomping competition and prizes, where everyone has the opportunity to get in the vat and enjoy themselves. Teams will be judged on enthusiasm, style, and their ability to create their own signature stomping song. Prizes will be awarded to the winning team. This event will require approximately 60-90 minutes to complete.

  • Art of Distillation –   In this anecdote filled presentation, you’ll learn the basics of the distilling process and how it is used to produce vodka, brandy, whiskey, and other spirits. You will sample a variety of distillates, and learn to appreciate their stylistic differences. This event will require approximately 60-90 minutes to complete.

  • Urban Winery Tour - Experience a virtual winery tour in the heart of downtown San Diego! Participants will enjoy a complete and detailed explanation of the entire winemaking process.
